The three Michelin star restaurant, Michel Bras, is near Laguiolle.  A five hour pilgrimage from Missegre, so we stayed the night.  The hotel is purpose built, using large areas of glass to make you feel a part of the Aubrac landscape.  It is a wonderful creation, but air conditioning should have been part of the design.
